KNOW YOUR BUTCHER

Butchery classes, food safety consulting, and everything that happens before the plate.

Hands-on classes focused on whole-animal techniques, knife skills, and recognizing quality in the meat.

Classes are held at the Lost Druid Brewery in Avondale Estates, GA—there’s time to eat, have a drink, and spend a bit of time around the table afterward.

No experience needed—just an interest in learning how it works.

Consulting

A good food safety program is the foundation for everything else—how a product is made, how it holds up, and how a business grows.

Rusty works with chefs, restaurants, and producers to build and refine systems that hold up in practice, from HACCP plans and SOPs to full program development.

Whether you’re starting from scratch or tightening an existing process, the work is grounded in what actually happens day to day.

About Rusty

Rusty Bowers is a butcher, chef, and educator whose work is grounded in whole animal utilization and a deep respect for how food is raised, prepared, and shared.

His career began in fine-dining kitchens, where precision and technique shaped his early approach. Over time, that work led to a different question—where food actually comes from, and what it takes to do it well from the start.

That shift took him into traditional butchery, where the work is slower, more deliberate, and closely tied to farms, seasons, and community.

He is the founder of Pine Street Market, a butcher shop based in Atlanta, where this work is practiced every day at the block.

Know Your Butcher extends that work beyond the shop—offering techniques, recipes, and insight to help people better understand their food and the craft behind it.

Why This Work Matters

Good butchery starts long before the knife touches the block.

It reflects how animals are raised, how they’re handled, and the standards we choose to hold ourselves to.

The approach we take at Pine Street Market reflects a commitment to whole animal utilization, disciplined craft, and a process that prioritizes integrity over speed.
